Shishito
Shishito peppers are small, slender Japanese peppers with thin, slightly wrinkled green skin and a mild, subtly sweet flavor. They are generally low in heat, with a fresh, grassy, and slightly smoky character when cooked, although an occasional pepper can be unexpectedly spicy. Their thin walls allow them to cook quickly and blister easily, making them especially well suited for sautéing, pan-frying, grilling, roasting, and serving as a simple appetizer or side dish. When cooked until blistered, shishito peppers become tender and develop a richer, slightly sweeter flavor.

Choosing
Choose shishito peppers that are firm, bright green, and free from soft spots, mold, or significant wrinkling beyond their naturally textured appearance. The peppers should feel fresh and crisp, with intact stems when possible. Smaller to medium-sized peppers are generally tender and cook quickly. Avoid peppers that appear limp, shriveled, or excessively damaged.
