Tender Greens
Tender greens are delicate leafy vegetables with soft leaves, fresh flavors, and a texture that makes them especially well suited to eating raw or lightly cooked. This group includes lettuce, arugula, baby spinach, mesclun and salad mixes, mizuna, tatsoi, and other young or delicate greens.
Tender greens vary from mild and buttery to peppery and slightly bitter. They are commonly used as the foundation for salads, but many can also be added to sandwiches, wraps, grain bowls, soups, pasta, and lightly cooked dishes.
