Hearty Greens

Hearty greens are leafy vegetables with thicker leaves and a more substantial texture that holds up well to cooking. This group includes kale, collard greens, Swiss chard, mustard greens, turnip greens, beet greens, and other sturdy cooking greens.

Their flavors range from mild and earthy to peppery and slightly bitter. Unlike delicate salad greens, hearty greens are particularly well suited to sautéing, steaming, braising, soups, stews, and other cooked preparations. Younger leaves can also be eaten raw or lightly cooked.
