Stone Fruit

Stone fruit are fruits with a single hard pit, or stone, at the center surrounded by juicy flesh. This group includes peaches, nectarines, plums, apricots, cherries, and hybrids such as pluots. Stone fruit can range from soft and very sweet to firm, tart, and intensely flavored, depending on the fruit and variety.

Peaches and nectarines may be yellow or white fleshed and can be freestone, clingstone, or semi-clingstone. Plums and pluots come in many colors and sizes, while apricots tend to be smaller with fragrant, delicate flesh. Cherries range from sweet to tart and are generally eaten fresh or used in cooking and baking.
