Hubbard

Hubbard squash is a large variety of winter squash with a thick, hard rind and dense, orange to golden-yellow flesh. It is often teardrop-shaped or elongated and may have blue-gray, dark green, or orange skin, depending on the variety. Hubbard squash has a rich, sweet, nutty flavor with a slightly earthy quality. Its dense flesh becomes smooth and creamy when cooked, making it well suited for roasting, baking, soups, purées, casseroles, and other hearty dishes. Its flavor is often compared to pumpkin or sweet potato, but with a deeper, more robust character.

ChoosingPreparationPairingMethods

Choose a Hubbard squash that feels heavy and solid for its size, with a hard, firm rind free from soft spots, deep cracks, or signs of mold. The skin may have natural variations in color and texture, but it should not appear shriveled or excessively damaged. Because Hubbard squash can grow quite large, smaller sections are often sold pre-cut. When buying a cut piece, look for firm, brightly colored flesh without excessive dryness, discoloration, or soft areas.
