Anjou pears
Anjou pears are a versatile pear variety with a rounded, egg-like shape, short neck, and smooth skin. They are commonly available as Green Anjou pears, which remain green even when ripe, and Red Anjou pears, which have deep red skin. Their flesh is firm, smooth, and juicy, with a mild, sweet flavor and subtle citrus and floral notes. Anjou pears are less delicate than softer varieties such as Bartlett and hold their shape well when cooked, making them suitable for eating fresh, baking, roasting, poaching, grilling, and adding to salads and savory dishes.

Choosing
Choose Anjou pears that are firm and free from deep bruising, cuts, shriveling, or signs of decay. Green Anjou pears do not change color significantly as they ripen, so color is not a reliable indicator of ripeness. To check for ripeness, gently press near the neck of the pear, just below the stem. A ripe pear should give slightly in this area while remaining relatively firm through the rest of the fruit. Anjou pears can be used while slightly firm for cooking or allowed to soften further for fresh eating.
