Broccoli
Broccoli is a member of the cabbage family grown for its edible flower head and tender stems. The familiar green broccoli forms a dense central head, while other varieties produce multiple smaller side shoots. Broccoli can also have purple or other colored heads.
The florets have a mild, slightly sweet flavor, while the stems are crisp and tender when properly peeled. Broccoli can be eaten raw or cooked using nearly any method.

Choosing
Choose broccoli with firm, compact heads and deep green florets. The florets should be tightly closed rather than yellowing or flowering. Stems should be firm and not excessively woody.
