Ingredients
2
tbsp melted unsalted butter + 1 tbsp butter not melted1⁄3
cup plain greek yogurt1⁄3
cup water2⁄3
cup all-purpose flour4
egg1⁄2
tsp kosher salt1⁄4
cup freshly grated parmesan cheese1
cup fresh greens (your favorite blend of spinach, kale, arugula, ect)1⁄4
cup fresh herbs (i.e. basil, dill, parsley or a combo of them)toppings: prosciutto/salami, freshly grated parmesan cheese, and/or sautéed veggies such as sweet mini peppers, red onions, scallions, bell peppers, or whatever veggies you have on hand
Directions
Step 1
1.) Preheat the oven to 450 F.
2.) Measure the following ingredients into your blender: melted butter, yogurt, water, flour, eggs, salt, parmesan cheese, greens, and herbs. Blend on high speed until everything is fully incorporated and smooth. Divide the batter into 2 equal parts, which essentially will make 2 Dutch Baby pancakes.
3.) Put 1/2 tbsp of butter in a 10-inch cast iron or carbon steel skillet. Place the skillet in the oven until the butter melts for approx. 2 minutes, but be careful not to burn it.
4.) Pour 1/2 of the batter into the warm skillet with the melted butter and bake at 450 F for
10-12 minutes, until you see some bubbles form around the edges and the center is fully cooked. The pancake will deflate out of the oven.
5.) Allow the pancake to cool slightly, then using a metal spatula work around the edges and underneath to gently lift off from the pan. If it sticks, try to remove it in one piece.
6.) Repeat Steps 3-5 with the remaining half of batter to share with someone you love!
7.) While it’s still warm, add your favorite toppings such as crispy pieces of prosciutto, freshly grated parmesan cheese, and/or sautéed veggies.
