Preheat oven to 350*

Step 2

Grease and flour a 9x13 pan. Cut apples into dice dice size pieces. In a large bowl, blend together eggs and sugar. Mix in baking soda, oil, cinnamon and vanilla. Stir in flour, fold in apples and nuts. Pour batter into greased 9 x 13 pan. Bake 55-60 minutes or until knife inserted in middle comes out clean.
