Instructions:
Combine everything from flour to lemon zest in a bowl and mix together. In another bowl, add eggs and milk, whisking to combine.
Add cubed, cold butter to dry ingredients and pinch butter to combine. You’ll want to break up the butter by smashing it with the dry mix until it forms pea-sizes shapes. Don’t overthink this step! The butter doesn’t need to be perfect.
Add milk/egg mixture to the dry ingredients and stir to combine until the dough comes together. Don’t over mix! You want it to be moist but crumbly. If it starts to get sticky, dust your hands with flour.
Line baking sheet with parchment paper. Dust your baking sheet with flour and scoop the dough into a mound in the center. Press and work the dough into a disc about 1”-1.5″ thick. Use a knife or pastry cutter to slice into 8 even triangles. No need to fully separate them at this time. (You can also flatten into a rectangle and cut into smaller squares – up to you!)
Preheat oven to 350*. While oven preheats, put your dough & baking sheet in the fridge/freezer. This helps keep the butter cold until baking time!
Bake scones for 20-25 minutes until golden brown on top. Let cool for 10-15 minutes before applying icing.
Icing instructions:
Combine powdered sugar, milk, and lemon juice, whisk to combine. Drizzle over cooled scones, garnish with thyme leaves, and enjoy!
