Creamery that produces cheeses from aged raw milk cheeses and pasteurized fresh cheeses such as ricotta and soft cheeses. All our cheeses are hand made using traditional, time-honored methods. We use only fresh milk, live cultures, and calf rennet. Organic farming practices are use although we are not certified since we supplement with local feed.
