Poblano peppers

Poblano peppers are large, dark green chili peppers with broad, slightly tapered bodies and thick flesh. They are typically mild to moderately spicy, although their heat can vary from pepper to pepper. Poblanos have a rich, earthy, slightly smoky flavor with subtle sweetness and a mild vegetal character. When ripe, they turn red or dark brown and can be dried to make ancho chiles, which have a deeper, sweeter, and more complex flavor. Their thick walls and relatively mild heat make poblano peppers especially well suited for roasting, stuffing, grilling, sautéing, and adding to sauces, soups, and stews.

Choosing

Choose poblano peppers that feel firm and heavy for their size, with deep green skin that is smooth or slightly naturally wrinkled. Minor surface wrinkles are common and do not necessarily indicate poor quality. Avoid peppers with soft spots, mold, significant bruising, or shriveled areas. Larger, evenly shaped poblanos are particularly useful for stuffing, while smaller peppers can be sliced or chopped for sauces, soups, and other dishes.
