Romaine

Choose romaine with crisp, upright leaves and a vibrant green color. The leaves should look fresh and firm, without significant wilting, browning, sliminess, or dark spots. The base should be intact and pale rather than dried out or excessively discolored. For a milder flavor and more tender texture, choose romaine hearts or smaller heads. Larger, darker outer leaves generally have a stronger flavor and sturdier texture, making them especially suitable for grilling, braising, or sautéing.

Before using romaine, remove any damaged or wilted outer leaves and trim a small portion from the base. Separate the leaves and rinse them thoroughly under cool running water, paying particular attention to the spaces near the base where dirt can collect. Dry the leaves well using a salad spinner or clean kitchen towels, especially when preparing salads, since excess moisture can dilute dressings and prevent them from clinging to the leaves. Romaine can be left whole, halved lengthwise, torn into bite-sized pieces, or chopped depending on the intended preparation.

Romaine pairs particularly well with rich, salty, tangy, and savory ingredients that complement its crisp texture and mild bitterness. Classic pairings include Parmesan, anchovies, garlic, lemon, olive oil, eggs, and creamy dressings. It also works well with grilled chicken, shrimp, salmon, bacon, and other savory proteins. Fresh ingredients such as tomatoes, cucumbers, avocados, herbs, and citrus add brightness, while nuts, seeds, croutons, and roasted chickpeas provide additional crunch. For cooked preparations, romaine pairs nicely with butter, shallots, onions, mushrooms, soy sauce, sesame oil, broth, and mild cheeses.

Grilling: Preheat a grill or grill pan to medium-high heat. Cut the romaine heads in half lengthwise, keeping the core intact to hold the leaves together. Brush the cut sides lightly with olive oil and season with salt and pepper. Grill cut side down for 2-4 minutes, until lightly charred while the center remains crisp. Finish with lemon juice, Parmesan, or your preferred dressing.

Sautéing: Cut romaine into large pieces and heat olive oil or butter in a skillet over medium-high heat. Add garlic, shallots, or other aromatics, then add the romaine and cook for 2-4 minutes, tossing occasionally, until the leaves are slightly wilted but still retain some texture. Season with salt, pepper, and herbs to taste.

Braising: Cut romaine heads in half lengthwise and place them cut side down in a skillet or shallow pan with a small amount of broth, wine, or water. Add butter, olive oil, garlic, or herbs, cover, and simmer over medium-low heat for 5-10 minutes, until the romaine is tender but still holds its shape.

Stir-Frying: Cut romaine into bite-sized pieces and heat oil in a wok or large skillet over high heat. Add garlic, ginger, or other aromatics, followed by the romaine. Stir-fry for 1-3 minutes, until the leaves are lightly wilted and the thicker ribs are tender-crisp. Season with soy sauce, sesame oil, or other desired seasonings.
